The wine remains on the lees for a month and goes through a partial malolactic conversion
with a large proportion of sand on limestone
the must is cold macerated at 4⁰C for 12 hours before being fermented separately
pure bramble and plum aromas that morph neatly into the finest and most finely poised palate
